Butterscotch Banana Waffles

2-1/4 c. all-purpose flour
1/2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 t. cinnamon
1/2 t. nutmeg
1/4 c. brown sugar, packed
3 eggs, separated
2 c. buttermilk
2 ripe bananas, mashed
1 c. butterscotch chips
Optional: maple syrup or butter
Sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg and brown sugar in a large bowl. In a separate large bowl, beat egg yolks. Stir in buttermilk and mashed bananas; stir in dry ingredients until well blended; set aside. Using an electric mixer at high speed, beat egg whites until stiff peaks form. Fold into batter. Gently stir in butterscotch chips. Heat a waffle iron and spray with non-stick vegetable spray. Pour the recommended amount of batter onto the iron and cook according to manufacturer’s instructions until golden. Serve with maple syrup or butter, if desired. Makes 6 to 8 servings.
